Yesterday was a beautiful and kind of easy day.
I went to get my hair done, sporting a bob now, must get used to it.
Then a bit of grocery shopping, had really no idea what to cook.
I went and saw this fresh fillet of cod and thought…mmmhh, I could make something nice with this. I called my girlfriend Tosca and told her to come over for dinner.
Here is the recipe now, so easy, but so delicious.
You need: ( 4 people)
1 large fillet of cod fish or 2 smaller ones
1 small clove of garlic, finely chopped
1/2 cup of fresh sage, finely chopped
1/2 cup of capers
salt, pepper to taste
2 cups of good quality olive oil
Preheat the oven to 350.
Take an oven proof dish and slice the grapefruit ( use organic, because you are not peeling it) and cover the bottom of the dish with the fruit.
Now put the fish on the bed of grapefruit, sprinkle salt and pepper on the fish, the capers, the sage and the garlic.
Pour the olive oil over and put in the oven.
After 25 minutes, the fish is done and all you need to do is remove the fish from the dish….Cod fish has some fat of its own, there for it will not absorb as much…you can discard the rest of the oil.
I served a big green salad with it, we had a wonderful Sauvignon Blanc with it and it was totally yummy.

And now another thing, if you have no grapefruit, use lemons or limes, no sage, no problem, parsley, basil, cilantro goes as well. No garlic, well, use onions instead. Do not get nervous, when one ingredient is missing, replace it or leave that one out…maybe not the fish, haha.
