Comforting Chicken StewIt is November and it is dark, cold and grey. So what we need is a bright, warm and colourful stew, that gives us comfort. Also nothing is nicer than to come home to a dinner that needed little prep time and has big impact on the mood of all family members.
And here it is, cooked in a slow cooker, so you can prepare it the morning of or even the night before.

 

You need: ( 4 people)
8 boneless chicken thighs
4 medium potatoes, peeled and cubed
4 carrots, peeled and cubed
1 large onion, cut in slices
2 cup white mushrooms ( if you do not like mushrooms, just do not use them)
salt, pepper
parsley
2 tablespoons of olive oil

Heat oil, add the chicken thighs and brown them nicely (if your pan is not that big, just do not add all the thighs at once, may take a bit longer) maybe 5 minutes. Then add the onions, saute for 2 more minutes. Salt, pepper to taste.

Transfer to the slow cooker and add the potatoes and carrots, cover with water and turn on medium high. Add lid and go to do whatever you want and need to do. You even can set the table for tonight….

When you come home, add the mushrooms, stir well and let sit for another 10 minutes.

Sprinkle with some fresh parsley, colourful, warm and delicious dinner, tastes the best with fresh crunchy bread.
