Curried Chicken

We have been spoiled in Southern Ontario so far…the winter has not been that bad yet, until today.

It is freezing out there and even my horses wanted to come in from the cold after being out there for just an hour…

So I was thinking we need heat, also from the inside.

How can that be achieved…spicy food, I thought and here is a recipe that will warm your body from the inside.

I have a recipe in my cookbook that is similar, but I changed it up today…

You need for 6 people:

12 boneless chicken thighs, cut in pieces

2 big onions, chopped

1 clove of garlic, finely chopped

3 tablespoons of coconut oil

3 tablespoons of red pepper flakes

3 tablespoons of hot curry powder

2 teaspoons of turmeric powder

1 pinch of cinnamon

2 teaspoons sea salt

1 can of chopped tomatoes

2 sweet potatoes, peeled and chopped

1 can of coconut milk

2 cups of green lentils

1 cup of fresh cilantro

3 cups of cooked basmati rice

Unusually long ingredients list for me, but needed here.

Heat the oil, add the onion, after 1 minute of sautéing add the garlic. Stir well, don’t let the garlic go brown…now add the hot pepper flakes, stir well, add the spices, keep on stirring until the house will smell nicely of the spices.

Now add the chicken and brown it slowly.

Add the tomatoes, stir again and add the green lentils and the sweet potatoes

Turn down the heat to medium low, add the salt and put the lid on the pot.

Simmer until the lentils and the potatoes are soft, around 20 minutes.

In the meantime cook the rice and add it to the stew.

Now add the coconut milk, let simmer for another 10 minutes and this lovely, spicy dish is ready to be served.

And it will be even better once you added the freshly chopped cilantro.IMG_1240
