Sometimes it is nice to have a dinner date with your significant other…but I like to stay home and cook, too.
So this Friday, I had a dinner date with Mr. Pia, here at home, cozy and warm and no need to watch the wine, because all we had to do, was go upstairs after.
I also like to stay home, so my girl Natty is not alone. ( But that does not mean I always stay in, we went out for dinner last night).
I went grocery shopping on Friday and I got some fresh pickerel.
I had cooked pasta at home.
White fish and pasta? Did not sound too enticing to me, so I really had to put my thinking cap on…most of the time not too difficult, even though I am a blonde ( haha).
Well, I went through my fridge and pantry and thought and thought.
I came up with something so delicious, I want to share it with you.
Preheat the oven to 400.
The recipe is for 2 people.
Juice and rind of one lemon
2 tablespoons of Sambal Oelek
1/2 cup of chopped basil
2 tablespoons of mayonnaise
3 tablespoons of panko
2 tablespoons of pine nuts
salt and pepper
Get your pickerel filets and put them in a baking dish and spread your mixture all over the fish and in the oven it goes.
Keep it covered with aluminum foil for the first 10 minutes and the last 10 without the foil.
In the meantime, put the cooked pasta in a pan and add 3 big tablespoons of butter and fry the pasta in the butter. Stir often until you have light brown and crispy noodles.( my new obsession, crunchy pasta).
Salt and pepper well and enjoy with the fish….absolutely yummy.
We had a wonderful bottle of wine, that my bestie Christiane brought from Southern France. It was a light red, that went well with this hardy fish.
We went into the living room, listening to Allan Parsons Project and had 2 glasses of whisky…we talked and laughed and had a great evening.
I love our dinner dates at home..and Natty does, too.
