Healthy Sweet Potato Stew

So, yesterday was a day, where I felt a bit off, you all know how it is…tired, cold, not really energy for anything …but I have to cook dinner, what to make is the question.

I had set up another batch of dough for bread, so I thought I am going to set up a batch for pizza..not really sure what to put on it, but it was at least a start.

Going through my Facebook and I see my girlfriend Tosca had posted a recipe for spicy basil chicken…oh great, I was thinking, that is what I am going to cook tonight. But here it goes, I had no chicken and so I took her idea and made a new recipe up and it was quite yummy and easy.

You need( 4 people):

3 sweet potatoes, peeled and cut in cubes

1 cup green lentils

1 cup brown rice

3 baby bok choy

1 red onion, chopped

1 clove garlic, chopped

1 tablespoon soy sauce

2 tablespoons fish sauce

3 tablespoons coconut butter

1 tablespoon turmeric

1 tablespoon curry

1 tablespoon or more of red pepper flakes

1/2 cup of freshly chopped cilantro

Heat the oil in a big pot, add the onion, saute for a bit, add the potatoes

keep on stirring, add the spices, stir and then add the lentils, the rice,stir and mix well.

Add a bit of water, put the lid on and simmer for 20 minutes, stirring in between, maybe adding more water, as the rice and the lentils absorb it.

Then add the bok choy

stir well, put lid back on and simmer until rice, lentils and bok toy are cooked.

Now add the garlic, mix well with the rest of the stew and now sprinkle the fresh cilantro all over and serve…absolutely yummy and vegan, too.
