Heat wave and I do not want to cook, but I have a hangry husband…

We have all been there.

It is hot outside, I mean really hot, like heat warning hot…sweltering hot.

I sit inside, nice cool house, my dog next to me, totally buried in my book and oops, my husband comes in, it is already almost 7pm and I have forgotten to cook dinner.

” Is dinner ready”?, he asks, ” I am starving”, like famished, like hangry.

” Yes, Dear, you go and have a shower”, by then it will be”.

Off I run in the kitchen and I remember a post I saw the other day about cooking pasta in the pan, so I do that, my oh my, life saver.

I have also tomatoes, zucchini, onions, peppers, garlic and mozzarella in the fridge. That will be one great dinner and should be done by the time the hangry man had his shower.

Here is how to do it:

you need:

1/2 package of spaghetti ( I use kamut spaghetti)

3 tomatoes

1 zucchini

1 onion

1 green pepper

1 glove of garlic

salt and red pepper flakes

1/3 cup of olive oil

Now place the pasta in a big pan and cover with water. Bring to a boil and stir, keep on medium high, stir occasionally , should be cooked in 5 -6 minutes.

In the meantime, chop the vegetables. Heat olive oil in a pan, add all the veggies, keep on high, stir, add salt and pepper flakes and by the time the pasta is cooked, the veggies are done, too.

Drain whatever water is left in the pasta pan, arrange on a plate and the veggies on top. Now slice the mozzarella in thin slices, place on top, fresh ground black pepper and fresh basil if you have, I did not.

Husband comes down the stairs and dinner is in the dining room, no more hangriness and a nice conversation over a good red wine..this time the topic was cars…
