I am sick…so I cook Risotto

Good morning and a cold one at that.
I am on antibiotics…grrhh, doc said that there is a bad virus going around that brings a bacterial infection on, makes sense to me, but it is the first time in 4 years that I am on antibiotics…and sick for that matter.
I decided to sleep in the other bedroom, so I can snore ( my nose is not working the way it should be) and cough as much as I want without waking up Mr. Pia ( not that he was that considerate).
So the easy mushroom risotto, yes, that is what I made.
And trust me, risotto is really easy, all the fuss, don’t know why.
Of course I did not take a pic as I was actually kind of sick, haha.
But too be honest, I frequently forget, I admit it.
But I managed to make a risotto and Mr. Pia was happy.
Here is the recipe:
You need:
2 cups mushrooms, I had brown cap and shiitaki
1 tablespoon of butter
1 small onion, chopped
1 cup of white wine
salt, pepper
Saute the onion in the butter, add the mushrooms, stir well and saute a bit( 2 minutes) before you add the wine, salt and pepper and simmer on low until the rice is ready.
For the risotto:
1 tablespoon of butter
3 tablespoons of olive oil
1 cup and a half of arborio rice
1 cup of white wine
salt, pepper
1/2 cup freshly grated parmesan
Heat the olive oil and the butter, add the rice, stir well until coated and add the wine. Simmer on medium high, stirring once in a while to prevent the rice from sticking to the bottom of the pot, now add a cup of water,do the same as before and more water until the rice is cooked, max. 30 minutes.
When the rice is cooked, stir in the parmesan and then the mushrooms.
Have some more parmesan and ground black pepper to sprinkle on top and you are all set…from start to beginning maybe 30 minutes.
You can add finely chopped basil or parsley over if you want. I did not…
