Lunch with my grandson Kipp

It is Wednesday today and that is my Kipp day.

That means, I am spending all day with my busy bee Kipp. A delight and at the same time a challenge.

Of course, I try to feed him great organic meals, that he also likes, he can be a bit picky sometimes.

Today I made an easy potato white beans soup and we both had some, he loved it. 

Here is the recipe:

you need:

2 tablespoons of butter

1/2 yellow onion

5 medium sized potatoes

1 can navy beans

Salt and pepper to taste

Melt the butter in a pot, add the onions and sauté them for about 1 minute.

Add the potatoes, cover with water and boil until they are almost soft. Add the beans and simmer until the potatoes are done. Now add salt and pepper to taste. I used less for Kippi’s bowl and more for me.

Blend with the hand blender and add a bit water or milk if it is too thick.

It was so much fun to watch him eat it and enjoy it.
