Meatless Monday: simple veggie stew

Good morning and be careful out there..there is quite a bit of snow, well at least in my driveway.
I think with surety we can say, that we always have the farm with the most snow…in Picton, in Caledon, we still had snow, when everybody else had nothing…we had snow and mosquitoes at the same time.
Mr. Pia is on his way to Niagara for business, hope the drive will be fine.
Kiddies are coming today, that will be fun.
I made my vegetable stew last night and it was simple, yet delicious and I have some left over for me, as Mr. Pia will not be home for dinner.
Here is the recipe:
2 cups of chickpeas, that I soaked all day
1 big yellow onion, chopped
3 medium sized potatoes, cut in cubes
3 medium size carrots, cut in pieces
1 red pepper, chopped
2 poblano peppers, chopped
2 tomatoes, chopped
1 head of kale, chopped
1 head of spinach
1 cup of parsley, finely chopped
salt, pepper
3 tablespoons of olive oil
1 tablespoon of turmeric powder
1 tablespoon of smoked paprika
Heat the olive oil and saute the onions, add the potatoes and carrots and stir and simmer for a while, now add the peppers, tomatoes and simmer for about 5 minutes, add the kale and the spinach and a cup of water and just simmer for about 15 minutes or until the potatoes are soft.

In the meantime heat some olive oil in a pan and roast the drained chickpeas…they will get nice and brown and also a bit crispy, salt them well and add the turmeric and the smoked paprika.

When everything is done, serve the stew in a bowl, sprinkle the parsley over and the chickpeas, they add a bit of nice crunch…with fresh baguette, really yummmmmmy.
Now off to start my day, the deer are outside, mad, because I have not put food out for them yet.
