Good morning and have a wonderful Sunday all.
Weather is mild and it is raining, yuck.
Mr. Pia is sleeping, what else is new.
I am up since 7, what else is new.
I promised you the recipe for the Holstein Schnitzel and here it is:
You need: ( 4 people)
2 thick pieces of pork or chicken, I used pork chops, no bone and flattened them with a meat beater by first cutting them in half horizontally and then put each piece in a zip bloc bag and beat it, until it is about 1/2 cm thick.
1 cup flour
2 cups bread crumbs
2 tablespoons capers
1 cup sunflower oil
2 tablespoons of butter
Dip each piece of the meat first in the flour, then in 2 of the slightly beaten eggs and then in the bread crumbs.Salt and pepper now.
Pour almost all the oil in a deep frying pan( keep a bit )
heat up and fry the schnitzel on medium high until golden brown on both sides…about all together 5 minutes.
In the meantime fry the other 4 eggs in the leftover oil until just perfect, still a bit runny.
In another pot, melt the butter, let it get just golden brown and add the capers. I love the hiss, when they hit the hot butter.
Now put the schnitzel on a platter, place on egg on each, salt and pepper and pour the butter/caper mix all over.
I served it with roasted potatoes and a green salad.
The original recipe also calls for anchovies, but I did not find any at the store yesterday and not everyone likes anchovies…so, if you like them, place 2 anchovies criss cross over each schnitzel /egg.
And here you go and enjoy it..the Sunday, the schnitzel, the day off, the family, the friends, the pets and being alive. And all that with a smile on your face…
