No fresh bread, no desire to cook…panzanella it is
So, if you have a husband that needs fresh bread with his salad, you spend all day with your grandson and did not buy fresh bread and dinner time is coming up faster than you want, what do you do?
Panzanella is what you do.
You can use the old bread…and he will love it, I promise.
Here is what you need:
3 cups old bread, cubed
olive oil, about 1/2 cup
1 clove of garlic
3 tomatoes, chopped
3 cups of greens, I mixed arugula with baby greens
1 cup of fresh basil, ripped apart
salt, pepper
more olive oil
white wine vinegar
First, roast the bread in a pan with olive oil, put the whole garlic clove in and let it roast with the bread…once golden, set aside.
Now put the greens and the tomatoes in a salad bowl.
Add the salt and pepper, vinegar . Now the bread, without the garlic and mix well and tata….dinner is served, one bowl and no question: ‘ Is there fresh bread ?”
I also served some burrata cheese with olive oil, fresh cracked black pepper and a bit of balsamic.
