Roasted Kale Bowl

You know, when you have one of those days, you spend all day doing something you like ( in my case, spending time with my daughter and grandson) and then the evening creeps up on you ( in my case daylight savings time) and you did not go shopping and you get a little panicky on what to cook for dinner.

Then I get my husband’s text…depicting a car, that means he is leaving…he will be home in 50 minutes and usually very hungry…Oh no, what to cook?

I open the pantry, I see rice, so I think I am making risottoIMG_1842

Then I open the fridge and see kale, bok choy, garlic…okay, I am going to roast this..IMG_1844IMG_1846

I first heat 1 tablespoon red pepper flakes and 1 tablespoon of turmeric in 3 tablespoons of olive oil to intensify the flavour.

I then added the chopped kale and the bok choy and roasted for about 15 minutes, until it was almost crispy…then I added a bit of coarse sea salt…and then the freshly chopped garlic and some fresh cilantro.

Once the rice was done, I roasted 4 slices of Haloumi cheese in the same pan as I roasted the vegetables.

I served the vegetables over the rice and added the cheese…my husband, who is not a kale lover, ate it all and loved it.photo 4 IMG_1848
