Wednesdays are the days I am babysitting Kipp, my darling grandson, my husband usually has dinner with his business partners , which suits me well, because I am exhausted, when Kipp leaves.
I spend Wednesday nights with girlfriends, watching movies, chatting and usually either having pizza or something simple to eat, because I am really and truly too tired, mind you, this little man is a very busy baby and is always on the go, but he is also the sunshine of my life.
This week it all was different.
Kipp did not come, because of my new dog Natty.
She needs time to get used to him and it is still a lot of work to get her accustomed to the house, she was a breeding bitch ( yes in this context I can use this word in public) and she is not really used to being a pet. So she is not used to my husband and not used to a baby.
So my girlfriend Tosca and I decided to watch the ” Outlander” and my TV did not work. We had planned to make a Salade Nicoise, one of our favourites and I did only have kale and no beans, but avocados. We decided to watch it at Tosca’s house and darn…her internet was down…Outlander for sure was not meant to be..Oh Lort…no Jaimie.
Well at least we had a fabulous dinner, because our Nicoise, the Caledon way, or the Salade Caledonoise was absolutely delicious and it was proof to my theory, that you never need to stick 100 % to a recipe, if you do not have one ingredient, use another and so on.
So here you go, the recipe for a Salade Caledonoise:
2 bundles of Kale ( any kale), finely chopped
1/2 red onion, thinly sliced
1 tomato, thinly sliced
6 baby potatoes, peel on, steamed
1 avocado, sliced
1 can or jar good quality tuna ( optional)
1/3 cup of olive oil
3 tablespoons of white wine vinegar
Put the chopped kale in a bowl, add the salt, pepper and the oil and massage the oil, salt and pepper well into the kale, now arrange all the other vegetables and the fish, if you like around and enjoy your dinner.
Of course much more fun, when you are doing things with your friend…we had a great evening.
