Hello my friends,
I visited Charleston , South Carolina with my oldest girlfriend the other day and we ate a lot of fried food and let’s face it, it is delicious, I mean, I love it…
But, we all know, and especially as you get a bit older, cholesterol goes up, blood pressure goes up and more nasty stuff is happening, hence, we have to eat well.
Thank God, all my blood values are good, but still, I look after myself, as we all should.
But I do not want to not to refrain myself from eating something I love…bad character, I guess.
That is why I give you this recipe now;
1 whole chicken, cut in 6 pieces, the legs, wings and breast
Salt, pepper, paprika powder, say a teaspoon each
1 cup of breadcrumbs…I always process mine in the food processor ( I use old bread) so I always have mix of sourdough and dark…
1 baking sheet lined with parchment paper
Preheat the oven to 385
Mix the breadcrumbs with the salt, pepper and paprika powder.
This goes extremely well with a fresh and crispy cucumber salad, for that you need:
1 large or 2 medium English cucumber, sliced very thinly ( I use a mandolin, but watch your fingers)
Salt and white pepper to taste
1 tablespoon of Dijon mustard
1/2 cup cream ( I know, you will say light?), but this is not bad considering the whole dinner
Mix the mustard, cream, salt and pepper well and pour over cucumbers, stir well and voila, the salad is done as well.And now for the cornbread, that of course is a must with such a delicious Southern dinner, you need for that:
1 and a half cup cornmeal
1 cup milk
2 cups flour
1 tablespoon of baking powder
1 cup coconut oil
1/2 cup of Maple syrup ( I had to throw in a bit of Canada, eh)
Mix the cornmeal and the milk and let sit.
In the meantime mix flour,baking powder, eggs, coconut oil and maple syrup and now combine the both.
Pour in a well buttered ( okay, butter now, but you want to get the bread out of the dish) baking dish and put in the oven…max 30 minutes at 375…and here you now have a wonderful dinner, that will take all together maybe one hour to make and is wonderful and delicious…I hope you will enjoy this and make it.
