Wow, we re having a heatwave here in Southern Ontario …30 C, 3 days in a row and not much cooler at night.
Do you want to use the stove or the oven…no.
Do you want to barbecue outside….no.
So, it needs to be light, cold and healthy and this is what we did.
My girlfriend is here for a while and we love to work in the kitchen together.
My husband had his weekly dinner with is business partners and we could prep our dinner and watch Outlander , swoon over Jamie and the beautiful clothes, cry with Claire…with a glass of wine and some chocolate.
So we made a bean salad.
2 cups of red kidney beans, dry, soaked overnight and then cooked for 45 minutes in water, no need to add salt or
2 cans of red kidney beans
1/2 cucumber chopped
1/4 of a red onion, chopped
1 red , 1 green, 1 orange pepper, all chopped
2 fresh jalapeño peppers, chopped
1 clove of garlic, minced
2 stalks of green onions, chopped
1 cup of cilantro, chopped
a pinch of salt, pepper, cumin, chili powder, cayenne pepper
1/2 cup of olive oil
1/3 of a cup of white wine vinegar or the same amount of lemon juice
Mix all ingredients together and enjoy.
My friend made the pico de gallo.
4 tomatoes, finely chopped
1/2 red onion, finely chopped
3 cloves of garlic, finely chopped
2 jalapeños , finely chopped
juice of one lime
Mix all together and enjoy.
Mr. Pia came home and was not impressed. 2 smelly women on his couch, so he went straight to bed, I think he wanted me to sleep on the couch…haha.
We had more this morning and made Huevos Rancheros…meaning we added 2 friend eggs and1/2 sliced avocado to it…still smelly, but feeling amazing, because we had a lot of good nutrition enter our system.
And to finish of our wonderful morning, we had a mama deer with her fawn come and visit, while two racoon babies toddled back into their bed on the tree.
