Everybody, who knows me, knows, that I love to be outside.
Eat outside, work outside, walk outside, play outside.
And everybody, who knows me, knows,that I also do not mind the heat, I love it warm, but somehow today…meh, not so much.
I rode early in the morning and that was nice.
I came back and took my old horses in and they are fine.
Ms. Natty lounges in between the two air-conditioning outlets…
I want to sit in the shade, but the deer flies are getting the best of me…so, lovely weather and I am inside and not in a good mood.
I should have gone to the grocery shop…too hot. I had a wonderful lunch with my dear friend instead…so much better.
So no food in the fridge, but beans, that I am soaking since yesterday.
So they are now boiling with the potatoes, I still had.
I will make a white bean soup with fresh tarragon.
It will be delicious . Maybe I will make pancakes…oh what am I saying, no I will not make pancakes…too hot, remember?
I will serve the soup with olive oil and garlic bread….that will do, must do.
And because it is so hot, I am not even taking photos.
But here is the recipe:
3 cups of white beans, either soaked or canned
3 medium sized potatoes, peeled and cubed
1 medium sized onion, roughly chopped
2 tablespoons of butter
salt and pepper to taste
1/2 cup of tarragon, finely chopped
Saute the onion in the butter, add the beans and cover with water, bring to a slow boil, about 30 minutes. Add the potatoes and more water…keep on simmering until the veggies are soft.
Use your hand blender , but before, take 1/2 cup of beans out….blend, add salt and pepper and add the un- blended beans back to the soup.
Serve with the tarragon and the toasted bread…that you rubbed with a fresh garlic clove.
Eat, have a cool shower and move to the next couch and watch a movie….or:
