Trout Cakes

Hello my friends. After my vacation I am back with great new ideas.

My first idea was to make a lasagna with kale and sweet potato, however no kale or sweet potatoes at home.

Then I went to Toronto with my daughter and did not end up grocery shopping,

I had, however, frozen trout…so I made trout cakes with quinoa for dinner.They are easy, healthy and delicious and here is the recipe:

You need ( for 2 people):

2 rainbow trout fillets ( skin removed)

1/2 cup cooked quinoa

1 shallot

1 egg

1 tablespoon capers

salt, pepper to taste

put all ingredients in your food processor or chop really fine. Mix well and shape round cakes ( like you would do with a hamburger)

Saute in a bit of olive oil until done, depending on the thickness for about max 5 minutes on medium.

I served them on a bed of organic greens, that I added leftover peas and beans to, some olive oil, balsamic vinegar, red onion and salt and pepper and we had a wonderful, light, fast and healthy dinner.ImageImage 1
